Tortilla Soup!

After having Chinese food 7 days in a row, we finally switched it up tonight. My mom and I went grocery shopping for sirloin steak, taco stuff, and tortilla soup ingredients!
My sister has been making a lot of tortilla soup in New York and kindly emailed the recipe to me. It's SO simple, even lazy chefs can do this one (i.e. sum and downs!)

1 carton chicken broth (the 34 oz size)
1 can diced tomatoes with green chile (if you can't find one with green chiles, just get regular diced tomatoes and then add a jalepeno, sliced in half to make the soup spicy)-- (we used 2 fresh tomatoes instead)
1 can tomato sauce
1 can corn
shredded cheddar cheese
tortilla chips

combine the chicken broth, corn and tomatos over medium heat until it boils (put the jalepeno in now if you don't have the spicy diced tomatoes), and then remove from heat.

put tortilla chips and cover with cheese in a bowl, then pour the soup over it and ta-da! tortilla soup!
add a splash of lime juice for a kick.

Makes approximately 5 servings.

  1. hahaha publicly outed! sounds good though!

  2. so Downs and I made this tonight (for Kristin), and it was fantastic, and really easy! Yay!!!! Thanks for the recipe.
