Farewell lunch for me!

A few weeks ago, one of my friends who is currently attending culinary school, prepared an amazing meal for four of us. It was sort of a farewell lunch for me before moving to New York! It's great when you manage to think of reasons to celebrate or do something special (although I was prepared to convince my friend to make something special for me whether or not I was moving).

Vichyssoise: cold potato and leek soup. I was very excited for this cold soup because a few weeks before this lunch, I made this same soup at home and failed quite miserably. The leek I used was too stringy, and on top of that I did not blend it enough, making every bite of the soup a stringy one.

Salad greens with shallot white wine vinaigrette. Simple salad great for summer!

Tomato Espuma (palate cleanser)

Chicken Ballotine with mushroom risotto, ginger-soy haricot vert and parsnip puree

Mango cheesecake served with mango puree and a mojito foam. I am usually not a big fan of cheesecake, but this was terrific! My only complaint is that I love cheesecake crust even more than actual cheesecake, so I was a little sad about the lack of crust. On another note, the presentation is so pretty!
